Blondies (White Brownies)

Peanut Butter and White Chocolate Blondies

Ingredients:

  • 125g plain flour
  • 1 tsp baking powder
  • 100g butter, softened
  • 150g crunchy peanut butter
  • 175g soft light brown sugar
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 75g white chocolate, chopped

8” square tin, lined with greaseproof paper

Method:

Preheat the oven to 160°c (fan).

Sift the flour and baking powder in to a small bowl and set aside. In a large bowl, cream the butter and peanut butter together until the mixture is very soft. Add the sugar, egg and vanilla extract and beat until combined. Add the flour mix and the chopped chocolate and mix to form a stiff dough.

Place the dough in the prepared tin (pat it in to the corners and level out) and bake in the oven for 25-30 minutes or until golden brown and almost firm in the centre. Allow it to cool in the tin for about 10 minutes so that the blondies shrink back from the sides of the tin, and then cool for a further 15-20 minutes on a wire rack. Cut the blondies into squares while they’re still a bit warm, and serve as quickly as you can to feed the hungry mouths hovering over them!

This is divine eaten warm with a dollop of vanilla ice-cream!
